Healthy Desserts are Possible All Summer Long
Wouldn't it be nice if every dessert could be healthy, especially during holiday parties? Well, here are some ideas to serve a sweet treat without the gooey guilt.
Popsicles are always a crowd-pleaser for the kids and can be made healthy and inexpensively.
Super simple fruit Popsicle recipe:
1 can full-fat coconut milk or 13 oz. of any type of full-fat milk
1 10oz. bag frozen fruit, any type you love
2 Tbsp. of a sweetener of your choice, agave nectar, honey, cane sugar, or 1 overripe banana.
Instructions:
Blend all ingredients, and then pour in Popsicle mold or ice cube tray to freeze.
For ice cube tray popsicles, put plastic wrap over the top and stick toothpicks into liquid before freezing.
For the adults:
Baked apples are a timeless tradition at many holiday parties, and with apples in abundance, you have many sweetness levels to from which to choose. Try this healthy spin on baked apples:
Baked Apples with Oatmeal Filling
4 apples, I like Gala or Fuji (I am a sweet-aholic)
1 cup rolled oats
¼ cup brown sugar
1/8 cup maple syrup
½ teaspoon ground cinnamon
¼ cup finely chopped pecans (or any nut of your choice)
¼ cup butter or ghee
Instructions:
Preheat oven to 350 degrees F (175 degrees C).
Core each apple, making a large well in the center, and arrange apples on a rimmed baking sheet.
Mix oats, brown sugar, pecans, and cinnamon in a bowl; cut in butter/ghee until evenly combined. Spoon 1/4 of the oat mixture into each apple.
